Christmas Quinoa, Reflections, and More

The other night (if you’re following me on FB, you may have seen this repice already, as I shared it the same night I made it), I didn’t know what to make for dinner with some leftovers I had, so with a little creativity and a good dose of “let’s hope this turns out”, I made healthy Christmas Quinoa (..or for you aliterative people out there – Cheesy Coconut Christmas Quinoa)….lots of good stuff happening in this dish…protein through the roof, fiber, and some hidden indgredients like peas and peppers!

 

Christmas Quinoa

Prep Time: 5 min

Cook Time: 20-30 min

Ingredients (serves 6)

    For the quinoa

    • quinoa
    • water
    • hummus

    For the sauce

    • 1/2 a can of coconut milk
    • 1/2 a container of Mori-Nu silken tofu
    • 1 t garlic powder
    • 3 T nutritional yeast
    • 1/2-1/4 C frozen peas
    • a shake of ginger
    • a shake of onion powder
    • 1/2 t sea salt
    • 1/2 t black pepper

    Add ins

    • sweet peppers (from Subway)
    • mushrooms, onions, or any other veggie of choice

    Instructions

    Step 1

    Cook quinoa according to directions (I made a huge batch of it for leftovers for the entire week) with water

    Step 2

    While quinoa is cooking, combine all sauce ingredients in a blender and blend until smooth.

    Step 3

    Transfer blender contents to a saucepan and warm over medium heat, adding peppers or any additional veggies you want.

    Step 4

    When quinoa is cooked, add in hummus (store bought or homemade), mix up, and then ladle sauce on top. Sprinkle with parsley and more sea salt/black pepper or other spices, as needed.

    I am so grateful for Ebay…not only for shopping (which I’ve done too much of over the years, lol.. though I have to share my “score” – these comfy shoes in perfect condition for about $10)

    ), but also for selling.  I was able to sell some things that I’ve had for a few years that just don’t get used at all and was able to buy this on amazon!  I admit, I am completely behind the times, people.. smartphones, ipods, mini ipads, …all this technology! I know how to use a *basic* cell phone and I know how to operate a Kindle.  Oh, and a laptop.  But I will admit I’m a bit giddy to see how I like this, as the reviews seem really positive.  If any of you happen to have this, let me know so I can pick your brain, lol!

    Oh, and if you happen to need/want to do some online shopping yourself this week, Totsy  is having a huge blowout sale.  I got a toy from them for my nephew Christmas of 2011, and it was a fine experience, but I am trying to stay as far away from these daily deal sites because they are just too tempting! lol

    And finally, in this hodgepodge post, it’s December 31st….the day that everyone thinks through the previous year and looks ahead to the next.  I started to reflect about this past year, and while there are some things that I accomplished that I’m proud of and that I enjoyed, I am more trying to look forward to what I can accomplish this next year.  I’m not necessarily making set in stone “resolutions”, but just trying to keep up the being healthy thing, growing closer to God, and finding contentment in Him.  Some personal/career goals to work on are to hopefully do a bit better with my Etsy shop, get a few harp gigs, and just enjoy everything I do.  Personal/relationship goals are to foster friendships, appreciate those I do have, and be open to whatever is in store for this coming year.  It’s all an adventure…sometimes scary, sometimes comforting, sometimes fly-by-the-seat-of-your-pants, “What am I doing?” adventure, but an adventure nonetheless, and while it’s safer and more comfortable to be on solid ground,sometimes in order to do and become more, you have to start to fly.

    Here’s to welcoming a wonderful 2013!

    4. I’ve never had quinoa, but I’ve always thought about trying it! Maybe I should try this recipe :)

        Yes, you should def. try quinoa! It’s good in stir-frys, salads, and wherever you’d us rice or even pasta. A slight nutty taste, but relatively mild.
